Amazing! We know we only gave this lady six eggs, But she has produced four separate dishes, Bravo Sophia!
Here is the second set, and her letter:
I cooked up two more eggs and wanted to send them to you.
The first is my rendition of egg in a basket-- a portobello basket! In celebration of your generosity I cut out a heart shape in the mushroom . Unfortunately, portobellos don't work as nicely as bread in keeping the egg in place. The egg in a basket is served over some romanesco sauce.
The second egg picture is a simple scrambled egg with harissa on top. Served with a roasted cabbage wedge with country style mustard and a raisin seed soda bread.
